&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp<p>相对于正宗川菜菜式而言,所谓的江湖菜最初植根于民间,指没有经过正规培训的江湖厨师自创的菜式,师承多家,不拘常法,看似无心,实乃妙手天成,如今业已名满天下,如我们常吃的毛血旺、辣子鸡、啤酒鸭等等皆属此类。江湖菜中烹鱼的方式有很多种,水煮、烫吃、冷锅、蒜烧等,像太安鱼这般考究的吃法可算少见。</p>
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp<p>  太安鱼,俗称&ldquo;坨坨鱼&rdquo;,就是江湖菜中的一道名菜。重庆市太安镇是川渝交通要道,产嘉陵江鲢鱼。在太安停车的司机们发现了这里的鱼味道鲜美自然,并且做法特别,然后流传到各地。上世纪80年代末90年代初,太安鱼成为重庆一大名菜。</p>
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp<p>  太安鱼,一大碗红彤彤的浓汤看上去辣味十足,闻起来香气四溢,令人垂涎三尺。汤里浮着的鱼块竟然做得跟豆腐一样嫩嫩的,轻轻用筷一夹就碎。尝一口,鱼肉爽滑,汤汁浓郁。和大家常吃的&ldquo;水煮鱼&rdquo;比起来,&ldquo;太安鱼&rdquo;并不算辣,但味道更富有层次感,用洪七公品尝黄蓉厨艺的话来形容,就是&ldquo;每咀嚼一下,便有一次不同滋味,或膏腴嫩滑,或甘脆爽口,诸味纷呈,变幻多端,直如武学高手招式之层出不穷,人所莫测&rdquo;。</p>
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp<p><font color="#ff0000" size="3">做法:</font></p>
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp<p>1、材料:花鲢(大头鱼)一条,大葱,蒜 ,姜,泡椒泡姜,香菜,郫县豆瓣,白糖,花椒,豆粉(生粉),白酒 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp做法:将鱼宰成鱼块,腌上郫县豆瓣,白酒(去腥),加豆粉调好。 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp2、准备好的窝笋打底,,大葱段和香菜。 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp3、准备的调料 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp4、将窝笋在开水中川一下锅,要脆点到少点时间。 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp5、将腌好的鱼片,在油锅里梭一下锅。 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp6、加混合油(素油和猪油少许),将调料放入炒香后。 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp将鱼块加入,再加入大葱段。 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp7、加入味精,鲜味,起锅。</p>

吃的鱼太多,都 快忘了这道 菜

<p>贩竟未尝过此菜,顿惊得周身三万万个毛孔不知是合还是张。</p>
